If the festive period has got you feeling a little under the weather, you need comfort food, and quickly – and there’s no better comfort food than a slow cooked stew. They fill the house with the aromas of deliciously healthy home cooked food and leave everyone wanting more.

The idea of any stew is to have all the ingredients in one place, in one sauce, including a balance of carbs and protein. Butternut squash and lentils provide just that, along with veggies and spices – just like in this amazing Winter Squash and Lentil Stew. The added ginger will help to fight your bugs and have you feeling ready to go again for New Years’ Eve.

It uses a pressure cooker, but if you don’t have one, a slow cooker or a stock pot in a low oven will do just as well.
