When it’s cold outside, who doesn’t love a traditional steamed pudding and custard? When it’s festive and cold outside our collective love of a pudding is even stronger.

However, after all the breakfast treats, a roast dinner and Christmas pudding, there isn’t much room left for an after dinner mint chocolate, let alone a steaming bowl of sticky toffee pudding.

But don’t worry! We found this healthy recipe for low sugar Lighter Sticky Toffee Puddings made using maple syrup instead of sugar, and we can confirm, these individual puddings of delight hit the brief with their sweetness and stickiness.

The addition of dried dates also adds natural sweetness and a fibre boost. And the great thing is, you don’t need a fancy steamer to make them, just a simple tray of hot water and a hot oven will suffice. Just whatever you do, don’t forget the custard…
