Spices, seasonal apples and muffin dough, what’s not to love? Adding fruit to sweet foods such as cakes and muffins has always been a favourite of ours. Doing so adds vitamins and fibre to what we all know is a treat, but since it’s Christmas, we still want to indulge. Adding spice such as ginger gives a little warmth too, and there’s nothing better when it’s cold and dark.

We love a muffin as a Christmas morning lazy breakfast, after we’ve unwrapped our presents and before the chaos of a big family Christmas roast begins a little later. To make things even easier, these Gingerbread Apple Muffins can be made a day or two before and because they contain coconut sugar and molasses, rather than refined sugar, they won’t spike blood sugar levels as dramatically.
