Cauliflower is a super versatile vegetable, yet most of us have only had it chopped into florets and boiled. Low in calories but rich in fibre, B vitamins, vitamins C and K, potassium, magnesium and phosphorous, this unassuming veg is often wrongfully cast away in favour of its green cousin, the broccoli.

However, cauliflower can be boiled, steamed, roasted and even grated and eaten as an alternative to rice. Plus of course, it can be covered in cheese sauce and baked to create the perfect cauliflower cheese.

But did you know that cauliflower can be steamed then mashed and served as a low carb, low sugar alternative to calorific mashed potatoes? To be honest, we didn’t either, but we do now, after discovering this amazing healthy recipe for Mashed Cauliflower with Roasted Garlic.

Roasted garlic has a truly amazing flavour, and when added to cauliflower and mashed, you really won’t miss the spuds. Plus, garlic helps to ward off colds and flu bugs, so it’s medicinal at the same time as being tasty. A festive bonus for sure.
