Of all the vegetables that we pile onto our plates at Christmas, carrots are perhaps the biggest family favourite (sorry, brussels sprouts…).

Like sweet potatoes, carrots are rich in beta carotene, a nutrient that gives orange and yellow fruits and veggies their colour. As we learned above, the body uses beta carotene to manufacture vitamin A, which is essential for eye health – hence why legend has it that carrots help us see in the dark!

Carrots are also a good source of vitamin C that supports the immune system, calcium for strong bones and teeth and iron for healthy oxygen transport through the blood.

These humble, everyday veggies are actually nutritional powerhouses. So, because it’s Christmas, why not give them a little festive twist? This Glazed Carrots recipe is sure to be a crowd pleaser as it combines a classic veggie that the kids love, with swish adult dinner party vibes!
