A salad? At Christmas? We know, we know, but bear with us. A warm salad is just the ticket when you’ve overdone it with the carb heavy, calorie laden roast dinners and everything else that Christmas has to offer. It makes a simple, healthy lunch or light dinner when you can’t face spending hours in the kitchen.

Butternut squash is in season right now, and when peeled, chopped and roasted is delicious. It provides excellent amounts of vitamin A and fibre as well as vitamin C, calcium, potassium and magnesium.

This Butternut Squash Salad is a tried and tested, go-to recipe of ours at this time of year. The brown rice and lentils add healthy, low sugar carbs and plant based protein, making this salad a filling, balanced, highly nutritious meal, without scrimping on flavour. It can also be made in advance, ideal for a tasty packed lunch if you have to work over the festive holiday season.
