It makes a simple, healthy lunch or light dinner when you can’t face spending hours in the kitchen.
Butternut squash is in season right now, and when peeled, chopped and roasted is delicious. It provides excellent amounts of vitamin A and fibre as well as vitamin C, calcium, potassium and magnesium.
