The way you cook and prepare vegetables is key to producing the best flavour – while many of us choose to steam or boil, this way of cooking can leave veggies tasting a bit blah. Rather than choosing to boil the flavour out, try sauteing, grilling, air frying or roasting instead, so you can dress them with herbs, oils and seasoning, then marinate them to perfection.

Roasting vegetables gives them a deep, rich flavour but the best part is you spice up the taste of your veg as much as you want. Try seasoning roast potatoes on a sheet tray with some delicious garlic and rosemary, or bake cholesterol lowering cauliflower with a sprinkling of fresh grated parmesan, black pepper and oregano.

Grilling is a superb way to impart a barbecue style smoked taste to veg and it’s ideal for produce such as parsnips and aubergines – while an air fryer will let you crisp up vegetables like spinach and kale to perfection. If you want vegetables that are soft and tender, but don’t want to steam or boil, try sauteeing them in a skillet with a small amount of healthy oil, like lemon and garlic infused rapeseed, for the ultimate in flavour!
