Grilling is a superb way to impart a barbecue style smoked taste to veg and it’s ideal for produce such as parsnips and aubergines – while an air fryer will let you crisp up vegetables like spinach and kale to perfection. If you want vegetables that are soft and tender, but don’t want to steam or boil, try sauteeing them in a skillet with a small amount of healthy oil, like lemon and garlic infused rapeseed, for the ultimate in flavour!
