Haggis, Scotland’s national dish, is a savory pudding made of sheep’s heart, liver, and lungs, minced with onions, oatmeal, suet, spices, and salt, mixed with stock, and cooked while encased in the animal’s stomach. While it’s a beloved dish in Scotland, it’s banned in the United States. The reason? The U.S. Department of Agriculture (USDA) has had a ban on foods containing sheep lung since 1971 due to concerns about contamination.
