7. Roasted Chicken and Vegetables

If turkey really isn’t your thing, and you prefer chicken then guess what – we won’t tell if you serve chicken for your Christmas dinner instead of turkey! We definitely won’t tell if you also make a one pot meal of chicken, plus all the trimmings, and feel smug that you don’t have the same level of washing up as a restaurant on a busy Saturday night.
One pot cooking is super easy. It not only cuts down on the dishes, it involves minimal prep time and keeps all the nutrients in your dish, making it super healthy. Like turkey, chicken breast is an excellent source of lean protein but that’s not to say the legs and wings aren’t also healthy.
This recipe for Roasted Chicken and Vegetables uses the thighs and drumsticks of a chicken, as well as the breast, making it just as perfect for a warming meal in that few days between Christmas and New year when no one knows what they’re doing or why they’re doing it.
